I recently took a trip to the North Fork to meet up with master pastry chef François Payard. I was lucky enough to get a sneak peek (and taste) of the pies he’ll be serving for Thanksgiving—and they are truly out of this world! These pies are available exclusively at Southold General.

As a longtime fan of Payard’s restaurant and cookbooks, we spoke about his incredible career as well as his restaurant Southold Social. Of course, I couldn’t resist asking him about his secret to the perfect pie crust. He graciously shared a few tips on how you can get your pie crust as light and crisp as his!

As he always does, Payard puts his creative twist on familiar holiday flavors with his Thanksgiving pie collection. Here are the Payard pies you can pre-order for Thanksgiving.

Pumpkin Cheesecake Pie

The Pumpkin Cheesecake Pie has layers of pumpkin spice sponge cake, a smooth cheesecake filling, and is topped with mascarpone cream and roasted autumn squash. It’s as beautiful as it is delicious.

Banana Mousse Cream Pie

The Banana Mousse Cream Pie has a banana pound cake base, is topped with silky banana mousse, and finished with a drizzle of salted caramel. It’s the perfect balance of sweet and rich without being too heavy.

Chocolate Custard Cream Pie

For chocolate lovers, the Chocolate Custard Cream Pie has a chocolate-glazed pie shell filled with smooth mousse and topped with a s’mores-inspired finish.

Apple Crumb Pie

And for a classic with a twist, the Apple Crumb Pie has brandied cinnamon apples and raisins beneath a zesty citrus-thyme crumble, adding a fresh flavor to the traditional pie.
